Dairy-Free, Sugar-Free, Pina Colada Ice Cream Cups
One of my favourite cocktails is a Pina Colada. There is something about the combination of creamy coconut, starchy banana and sweet juicy pineapple that just makes me think of tropical travels. These Ice Cream Cups have just 3 ingredients and involve nothing more than blending and pouring into cake cups and freezing. It couldn't be simpler and yet these taste so indulgent and will keep your ice cream/pudding cravings in check. Ditch the Ben and Jerry's - this is natural goodness, low calorie, guilt-free and they definitely don't compromise on taste.

Nutrition | Healthy Ice Cream

Ingredients:

150g Coconut Cream (I use Blue Dragon in a carton)

1 large, ripe banana (it's important that the banana is perfectly ripe - a perfectly ripe banana has plenty of brown spots on the skin)

120g chopped fresh pineapple.

If you are a sugar addict you can always add a teaspoon or two of honey but these are sweet enough on their own.

Directions:

Blend all ingredients together and pour into cake cases (silicone ones work well).

Top with toppings of your choice eg chopped macadamias, almonds, shredded coconut, banana chips etc. I used chopped pistachios and some raw cacao bean nibs.

Freeze until solid and enjoy straight from the freezer. A couple after dinner is very satisfying.
